Ensure Life Cappuccino of Mushroom
Ingredients
- 200g button mushroom
- 100g shitake mushroom
- 80g oyster mushrooom
- 50g unsalted butter or soft margarine
- a dash of white truffle oil
- 100g Ensure® Life Vanilla Powder (mix with 80mL of water to dilute)
- 1.5 liters water
- salt and pepper to taste
Method
- Slice all the mushroom into thin strips
- Bring water to a boil and add mushrooms and butter
- Once boiled, remove from fire and add Ensure® Life powder, mix well
- Using a hand blender, blend mixture into a smooth soup consistency

Ensure® Life Steamed Chocolate Pudding
Ingredients
- 85g butter or soft margarine
- 60g sugar
- 95g self raising flour
- 2 eggs
- 1 tablespoon cocoa powder
- 2 tablespoon Ensure® Life Vanilla Powder
Method
- Beat butter and sugar until white and creamy
- Add eggs and flour followed by cocoa powder and Ensure® Life powder
- Spoon into greased ramekins and steam for 25 minutes
- Serve with fruit, low fat ice cream or fat free custard
- Add a dash of truffle oil and serve immediately

Ensure® Life Salad of Poached Tiger Prawns
Ingredients
- 300g tiger prawn - cooked and halved
- 2 green apples – cubed
- 1 stalk celery – cubed
- ½ white onion – chopped
- 1 tablespoon Japanese baby mayonnaise
- ½ lemon juice
- 2 tablespoon Ensure® Life Vanilla Powder (diluted with a little water)
- 1 cos lettuce - cut into pieces
- salt and pepper to taste
Garnish
- 6 cherry tomatoes
- 18 pieces semi dried tomato
- 18 pieces stuffed olives
- 50g walnut
Method
- Mix prawn, apples, celery and onion in a bowl
- In another bowl, mix mayonnaise with lemon juice, Ensure® Life powder, season to taste
- Pour dressing into salad bowl and toss well
- Arrange cos lettuce on the bottom of a nice salad bowl and pour prepared prawn salad over
- Garnish with walnuts, tomatoes and olives
